Fried Cream Dory with Pesto Sauce

Enjoy your favorite cream dory with this special sauce made richer and creamier by RecipeTV!
- FOR THE CREAM DORY:
- 1 kg cream dory fillets
- olive oil (enough to fry the fish)
- 1 teaspoon butter
- 6 cloves garlic
- 2 kalamansi, squeezed
- salt and pepper to taste
- FOR THE PESTO SAUCE:
- 1 1/2 whole garlic, minced
- 1 tbsp butter
- 1 cup evaporated milk
- 2 1/2 tbsps pesto pasta powder mix
- 1/4 cup water
- salt, pepper, and sugar to taste
In a medium saucepan over medium-low heat, sauté garlic in olive oil and butter. Pour the evaporated milk and let it simmer until the milk thickens.
Add pesto pasta mix. Season with salt, pepper, and sugar. Mix well.
Add water and let it simmer for 5 minutes. Transfer to a medium bowl and set aside.
Marinate the fillets in kalamansi, salt, and pepper.
- In a non-stick frying pan, sauté garlic in butter and olive oil. Add cream dory and fry until brown.
