Melt butter in skillet. Season pork with salt and pepper.
Sear pork until browned on both sides for about 3 minutes per side.
Remove pork from heat and transfer to a plate.
Pour off fat from skillet and leave only about 3 tbsps. of oil.
Over medium heat, add flour and pour in milk while whisking.
Add thyme. Let simmer over low heat and put back meat pieces in the pan.
Arrange on a platter.
Sprinkle with grated Parmesan cheese.
Drizzle with extra virgin olive oil.
