Grilled Chicken Pasta with Coriander Pesto Sauce

Procedure

For the Chicken and Bacon:

  1. Season chicken breast with salt and pepper.

  2. Grill in a hot grill pan with oil until done.

  3. Remove from heat and cut into thin slices. Set aside.

  4. In a frying pan, cook bacon over moderate heat (do not add oil) until crisp and set aside.

For the Sauce:

  1. Combine mustard, coriander, garlic, cashew, cheese and bouillon cubes in a food processor.

  2. Blend until a smooth paste is achieved.

  3. While blending, gradually pour in olive oil.

  4. Mix well until smooth texture is achieved. Set aside.

  5. Cook pasta according to package directions.

To Serve:

  1. Toss chicken, pasta, bacon and sauce in a bowl.

  2. Serve immediately.
