Pan-Grilled Chicken with Mango Salsa

Ingredients

  • 4 pcs Magnolia Chicken Breast Halves, boneless
  • 2 tbsps Magnolia Nutri-Oil
  • 2 tbsps Magnolia Gold Butter
  • salt and pepper (to taste)
  • 1 cup mango flesh, ripe and diced
  • 1/4 cup medium tomatoes, seeded and diced
  • 1/4 cup medium red onions, finely sliced
  • 1 pc jalapeño pepper, seeded and minced
  • 1/2 cup spring onions, minced
  • 1 pc lemon or lime, juiced
  • 1/4 cup cilantro, chopped
  • 3 tbsps extra virgin olive oil
  • salt and pepper (to taste)

Instructions

For the Chicken:

  1. Season chicken with salt and pepper.

  2. Brush with oil and butter.

  3. Grill until cooked through, about 10 minutes.

  4. Transfer to plates and serve with salsa.

For the Salsa:

  1. In a glass bowl, mix all ingredients.

  2. Toss gently to thoroughly mix.

  3. Season with salt and pepper.

To Assemble:

  1. Place about 1/3 cup of the mango salsa in the center of each serving plate.

  2. Slice the chicken and stack the slices on top of the salsa.

  3. Garnish with cilantro sprigs.
