Mandarin Chicken is an easy-to-do Asian dish coated with rich, orange sauce usually cooked with orange, lemon juice, soy sauce, and honey.
- 1 pack Magnolia Chicken breasts, fillet, sliced into strips (500gms)
- salt and ground black pepper (to taste)
- cooking oil (for deep frying)
- 2/3 cup cornstarch
- 1/2 cup all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper, ground
- 1/2 cup cold water
- 1/4 cup banana ketchup
- 1/4 cup vinegar
- 1/2 cup sugar (add 2 tbsp)
- 1 1/2 tsp salt
- 1 cup water
- 2 tbsp cornstarch (dissolved in 3tbsp water)
- spring onions, chopped
- sesame seeds, toasted
Season chicken strips with salt and pepper. Set aside.
Combine all batter ingredients.
Mix well to achieve a smooth, thick mixture.
Dip chicken pieces into batter and deep fry in hot oil until chicken turns golden and is cooked through. Do this for about 5 minutes.
Drain in paper towels. Set aside.
In a saucepan, combine sauce ingredients (except last 2 ingredients).
Boil then stir in cornstarch mixture.
Continue to cook until mixture thickens.
Just before serving, stir in chicken pieces into warm sauce. Mix well.
Sprinkle with spring onions and sesame seeds.
- Serve immediately.
