Albondigas

Procedure

  1. Combine meatball ingredients in a bowl. Mix well and form into 1” in diameter balls. Set aside.

  2. Heat olive oil in a saucepan. Sauté garlic and add wines. Allow to boil until mixture reduces to half of its original amount.

  3. Add tomatoes and water. Let simmer then add meatballs.

  4. Cover and cook (without stirring) until meatballs are thoroughly cooked.

  5. Season sauce with salt and pepper.

  6. Sprinkle grated cheese on top.

  7. Serve with cooked pasta or as an appetizer.

  8. Serving good for six to eight.
